We serve coffee, but we’re not your typical coffee shop. Inspired by the community panaderías of Puerto Rico, where conversation blooms and neighbors, family, and friends make their mark, we’ve made a conscious decision to slow things down.

For us, baking and coffee are not just about food; they are about memory. We grew up surrounded by the warmth of Puerto Rican kitchens, where the smell of pan de agua or café colao meant more than flavor — it meant family, laughter, and community.

When we created Don Cola’o, we wanted to bring those same feelings here to Meriden. A place where traditions live on, where people can slow down, share a table, and feel at home. Every quesito, every mallorca, every cup of coffee is made with care, carrying the essence of our roots.
